Vegetable Chili

Saute finely chopped onion in an InstantPot in ghee or butter until soft. Add finely chopped garlic and cumin, and saute until fragrant. Add canned tomatoes, dry beans, diced bell peppers, and diced onion. Fill the pot with water right below the pressure line. Add salt and peppercorn. Pressure cook on high pressure for 45 minutes.
